Meat Cutter Jobs description
The key responsibilities of a blue collar meat cutter are receiving, inspecting, coding, rotating and storing meat in an appropriate storage area, recording the quantity of meat received and issued to cooks and keeping records of meat sales, ensuring meat quality, curing, smoking, tenderizing and preserving meat as well as cutting, trimming, boning, tying and grinding meat such as beef, pork, poultry and fish to prepare meat in cooking form. Also, a blue collar meat cutter has to wrap, weigh, label and price meat pieces, shape, lace and tie roasts and scrape and tray products, cube steaks, grind ground meat and cut and process meat in compliance with the Standard Practice Manual.The other meat associated responsibilities that a blue collar meat cutter has to perform are wash, rinse and sanitize all cases, wrap stations and area, scaling equipment, cooler, cutting room including disassembling and re-assembling equipment therein as well as estimate requirements and order or requisition meat supplies to maintain inventories.
This position requires the ability to stand and walk almost all the time while working in temperatures of 45 degrees F.
